RECIPE: Red Velvet & Fortune Favors Cookies

Red velvet pecan cookies

Let's be real, the real meaning of Valentine's Day has gotten washed out by traditional cliches. It's really about celebrating the complexities of love in all of our relationships: friendships, community, and family. Don't forget to tell those people that you love them! ...And making these delicious red velvet cookies is a love language in itself :)

Ingredients:
(makes about 30 cookies)

2 cups all-purpose flour
1/2 cup Dutch process cocoa powder
1 tsp baking soda
1 tsp kosher salt
1 cup (2 sticks) unsalted butter, at room temperature
3/4 cup packed brown sugar
1/2 cup granulated sugar
1 egg
1 tsp red gel paste food coloring
2 tsp pure vanilla extract
1 cup Fortune Favors The Classic candied pecans, coarsely chopped
1 12-oz pkg semisweet or dark chocolate chips

Directions:

  1. Heat oven to 350°F. Line baking sheets with parchment paper. 
  2. In medium bowl, whisk together flour, cocoa, baking soda and salt.
  3. In a large bowl, beat together butter and sugars until combined (using an electric mixer or by hand). Add egg, food coloring and vanilla and mix until just combined.
  4. Add flour mixture and mix until just combined. Fold in The Classic pecans and chocolate chips.
  5. Scoop heaping spoonfuls of dough onto prepared sheets, spacing 1½ inches apart.
  6. Bake cookies, rotating positions of pans on racks halfway through, until darker around edges, 9 to 12 minutes total. 
  7. Let cool 5 minutes on pans, then slide parchment (and cookies) onto wire rack and let cool at least 5 minutes more before serving.
