Potato Salad with The Mesquite

Potato salad just got a whole lot more exciting! Our Fortune Favors The Mesquite Potato Salad is a delicious twist on the classic dish, featuring the smoky-sweet crunch of our Mesquite candied pecans. 3 pounds Yukon Gold potatoes, peeled and cut into 3/4-inch chunks

1 1/2 cups mayonnaise or Vegenaise

3 TBS white vinegar

1 TBS Dijon mustard

2 celery stalks, diced

3 hard boiled eggs, chopped

1/2 cup chopped Fortune Favors the Mesquite

Salt and Pepper to taste

Directions:

Place the potatoes in a large pot filled with cold water and bring to a boil. Lower the heat to medium to maintain a gentle boil and add 1 teaspoon of kosher salt. Cook for 20-25 minutes, or until the potatoes are fork-tender. Drain let cool enough to handle.

Peel potatoes if desired. Cut into 1/2" pieces (or whatever size you prefer). Transfer warm potatoes into bowl and toss with vinegar. Set aside and let them cool. 😎

Add chopped celery and hard boiled egg.

In another bowl, mix mayonnaise, mustard, salt and pepper. Pour mixture over potatoes and let chill in the fridge for at least an hour, preferably overnight.

Just before serving, top with chopped Fortune Favors The Mesquite. Enjoy the smokey sweet flavors all working together!
