This versatile (and dare we say irresistible) sauce relies on the alchemy of melted sugar, butter and heavy cream -the traditional ingredients for a delicious caramel sauce. But we took the topping over the top by adding Irish Cream liqueur and chopped Fortune Favors The Classic pecans. Use it on ice cream, pound cake, or as we did here to finish off a New York-style cheesecake.
Ingredients
¼ cup roughly chopped Fortune Favors The Classic pecans
1 cup granulated sugar
¼ cup water
2 Tablespoons unsalted butter
⅓ cup heavy whipping cream
⅓ cup Irish Cream liqueur
Directions:
Over medium heat in a medium saucepan, melt sugar in the water.
Let it come to a boil and continue to cook, unstirred, on medium heat until the mixture turns a light golden brown.
Carefully remove from heat and stir in butter. The mixture will foam and bubble... that's the delicious alchemy in action!
Continue stirring and add the cream and Irish Cream liqueur and stir until all the ingredients come together.
Let cool for a few minutes, then add the Fortune Favors The Classic chopped pecans. The sauce will thicken as it cools.
Serve over the dessert of your choice. Leftovers can be stored in a glass container in the refrigerator for up to two weeks, but there won't be any.
