These chewy energy bites are easy to make, packed with protein, and a great on-the-go snack for winter adventures! You can customize these with your favorite ingredients too :)
Ingredients:Makes 15-18 bites
10 dates1 1/2 cups Fortune Favors candied pecans1/2 cup old fashioned oats (use GF oats, if desired)1/4 cup flaxseed meal1/4 cup almond butter (or other nut butter of your choice)2 tablespoons maple syrup (we suggest Wisconsin-made Tapped)pinch of sea salt
Optional ingredients:-1 tsp vanilla-2 tsp cinnamon-1/8 cup chia seeds-1/4 cup mini chocolate chips (use vegan chocolate, if desired)
Directions:
Combine all ingredients in a food processor until texture is smooth, like a dough. (If you don’t have a food processor, coarsely chop dates and pecans with a chef’s knife and then mix with other ingredients… This version will turn out less smooth and more chunky, but just as delicious!)
Roll mixture into individual balls, about a tablespoon-ish each.
Store in the fridge or freezer in a sealed container or resealable bag, dividing layers with wax or parchment paper.
